I think you’ll love this dumpling soup for the same reasons I do. It’s easy (it’s a 15-minute, activity night dinner), it’s made with basic ingredients, and most importantly, it’s got major flavor! When you’re craving a lighter meal that’s still plenty satisfying and flavorful, look no further than this potsticker soup (aka wonton soup). Similar to my vegetarian ramen and creamy ramen with egg, we’re layering flavor throughout this soup – in the broth, with the dumplings, and with the garnishes. It’s easy to customize your own bowl according to your flavor preferences, so it works for everyone in the family. (Or maybe almost everyone.) 😉

Are you wondering if you should use dumplings, wontons, or potstickers in this soup? This recipe is incredibly flexible, so you can use whatever type you prefer. I would recommend using smaller dumplings so they can fit on a spoon, but other than that, pick your favorite.

Ingredients

  • Ginger–Gingerimparts a great layer of freshflavorto this soup, don’t skip it! Use fresh for bestflavoror frozen or tubegingerfor a shortcut.
  • Green onions– Look for sturdygreen onionsthat aren’t wilted or slimy. You could also use a shallot orgarlicin place of the whiteonionsand skip the garnish if you prefer, but it adds lovely mildonionflavor. You can also use fresh chives.
  • Sesame oil– This adds another layer offlavorto the chicken potsticker soup, but you could also use a high-smoke pointvegetableoil like canola or avocado.
  • Bone broth– I prefer to use bone broth in this soup as it adds a richness and boost ofproteinbut you could also use regular broth and/or homemade broth if you prefer.
  • Dumplings– You have a lot of options when it comes to thedumplings(or potstickers!). I prefer smallerdumplingsthat will fit on a spoon so they are easier to eat and you can choose whatever variety you like with whatever filling sounds good. (Trader Joe’s mini chickenwontonsand you can also find big bags of Bibigo wontons at Costco, both are perfect!)
  • Spinach– Look for babyspinachwhich can have smaller, more tender leaves. If you don’t like a big bite ofspinach, roughly chop before stirring into soup. (I like to also take off some of the stems when it’s easy, not trying to get them all!)
  • Chili crisp oil – If you like a little heat, be sure to drizzle your bowl of wonton soup with chili crisp oil.

Saute aromatics. Heat sesame oil in a large pot or dutch oven over medium heat and add ginger and white part of green onions. Sizzle, stirring frequently, until fragrant, about 30-60 seconds.

Simmer. Pour in bone broth and bring mixture to a boil. TIP: Cover pot while bringing to a boil to shorten cooking time.

Cook dumplings. Carefully add the potstickers in soup mixture and cook for about 2 minutes, or according to package instructions.

Cook spinach. Stir in spinach leaves and cook until wilted.

Serve soup. Ladle soup into bowls and garnish with a drizzle of sesame oil, soy sauce, and hot chili oil to taste. Sprinkle with green portion of green onions.

FAQs

Is this dumpling soup vegan?

No, as written this dumpling soup is not vegan. If you want to make a vegan and vegetarian option, swap out the bone broth for a vegetable broth and use vegetarian soup dumplings instead of chicken or pork dumplings.

What is the difference between Chinese dumpling soup and Korean dumpling soup?

There are many different versions of dumpling soup and many cultures and cuisines have their own form of a dumpling (pieces of dough wrapped around a filling) that are made with different fillings, different wrappers, and different shapes.

So many cuisines also have their own version of dumpling soup, featuring their own style of dumplings and made with varying ingredients.

Do I have to use bone broth?

No, you don’t have to use bone broth. I prefer bone broth as it adds rich flavor and an extra boost of protein, but you can also use regular chicken broth, vegetable broth, or homemade broth. This recipe is flexible!

Store leftover soup in the refrigerator in an airtight container for 2-3 days.

Can you freeze wonton soup?

Most of the time, freezing soups is totally fine, but because this one has pasta, I do not recommend freezing it as the pasta texture can get soggy.

This chicken dumpling soup recipe is on the lighter side. If you want to add a side, try one of these easy side dishes:

  • Rice – You can also serve the soup over rice to bulk it up or serve a side of cauliflower fried rice.
  • Veggies – Try air fryer cauliflower and broccoli or sautéed haricot verts.
  • Dessert – Sometimes, a lighter meal means there’s more room for dessert! Serve your favorite or whip up these Crumbl copycat sugar cookies.

Ingredients

  • 4 tsp. minced ginger
  • 4 green onions (leave white and green parts separate)
  • 1 Tbsp. sesame oil
  • 8 cups chicken bone broth
  • 24 oz. dumplings
  • 6 cups baby spinach
  • soy sauce, toasted sesame oil, and chili oil for serving

Instructions

  1. Heat sesame oil in a soup pot or dutch oven. When hot add ginger and white parts of green onion. Let sizzle until fragrant, about 1 minute.
  2. Pour in bone broth and bring to a boil. (Cover pot to help speed up the process.)
  3. Stir in dumplings and cook for 2 minutes.
  4. Stir in spinach and cook until wilted.
  5. Garnish with a drizzle of sesame oil, hot chili oil, and sliced green onions.

Notes

  • Look for small dumplings (also called potstickers and wontons, see above!) that fit on a spoon.

    We made this for the first time tonight and it was great! Our 3 and 5-year-olds each tried a bite or two of dumplings but enjoyed the broth the most. Our 13-month-old devoured all of it! We used the Bibigo brand of mini wontons (from Target), and I jazzed my bowl up with some Momof*cku Chili Crunch sauce. A tasty, quick, and easy meal that my husband demanded goes into our recipe rotation.
