After serving thousands of pit beef, ham and turkey sandwiches, I think I have seen and tasted every Chef’s version of Baltimore Tiger sauce. Here is the basic Baltimore Tiger Sauce that is served at pit beef stands in Maryland. Every pit beef stand has their own secret version of Tiger sauce, but the authentic pitmaster recipe is based on Tulkoff’s original prepared horseradish.

The sauce has a subtle heat that is paired with creamy mayonnaise and is a tasty condiment for steaks, prime rib, pit beef and roast beef.The beauty of this amazing creamy sauce is in its simplicity. Only 4 ingredients.

There are several versions that tell you to finely grate fresh horseradish root for an extra hot taste, but that is not necessary or desired for an authentic Baltimore Tiger sauce. Not everyone likes that much heat, and it will mask the flavor of the beef. If your guests want the extra heat, serve a dish of extra hot prepared horseradish on the side.

Tiger Sauce for roast beef is very different from the sweet and sour Tiger Sauce brand name that is made with a cayenne peppers base. Of German origin, Baltimore tiger sauce is a creamy horseradish sauce that has the addition of vinegar and mustard.

What You Will Need For Tiger Sauce

For this Baltimore Tiger sauce recipe you will need mayonnaise, sour cream, prepared horseradish and dry mustard. That’s it 4 simple ingredients. Plus a pinch of salt and pepper to adjust the taste.

Quick Tips For Making Tiger Sauce

Mayonnaise

Use a heavy-duty mayonnaise like Hellman’s or Dukes. While Dukes mayonnaise seems to be a little more tangy than Hellman’s, both are thick enough to hold up well as a thick condiment. In our taste kitchen, generic mayonnaise tended to be to thin, and when combined with the prepared horseradish and sour cream ended up too watery.

Horseradish

Use prepared horseradish for Baltimore Tiger sauce. We want a subtle heat, not extreme sinus clearing heat. Prepared horseradish already features freshly ground horseradish root, vinegar, oil and salt that are essential to the recipe for Tiger sauce. If you decide on using freshly grated horseradish root, add a splash of vinegar or lemon juice to tame the horseradish and perhaps a pinch of sugar.

How To Make Baltimore Tiger Sauce

To make Baltimore Tiger Sauce combine mayonnaise (½ cup), with sour cream (2 tbsp). Add in prepared horseradish (¼ cup) and dry mustard (1 tsp). Finish the Tiger sauce with salt (pinch) and freshly cracked black pepper. Refrigerate for 30 minutes to let the flavors develop.
